Yesterday, I finally had the chance of fulfilling my promise to my sister-in-law that I would cook Lengua for her as a graduation gift. Kind of late but better late than breaking a promise right? So I got down into business and prepare the necessary ingredients. Most of the time, we get to eat this food specialty during parties at hotel and when you order as well from restaurants, which tends to be expensive. The main ingredient is the ox tongue, which is kind of expensive really and it is not available all the time as well.
So anyway, going back to what I was doing…mind you I was working on my laptop while doing this…sort of multitasking…
Anyway, I want to share the basic ingredients in preparing this kind of dish:
— Ox tongue
— Tomato sauce
— Tomato paste
— Some potatoes or one could use fried bananas ( saba ) and green peas ( cooked )
— Red or green bell peppers
— Usual onions and garlic to saute
— Salt and pepper to taste
And just for additional flavor, you could add in Worcestershire sauce for distinct flavor and honey mustard for some sweetness.
There you go! And of course it would not hurt if when you boil the meat to tenderize it, rub it with some pepper and fresh basil leaves or just basil straight from the bottle just for more flavor and great smell. Bona petite!
